Say WHAT? Low Carb BROWNIES? not possible…

My friends, it is true, you can eat your brownies and have your low carb too, AND as an added bonus they actually taste good!  The BF highly approves and that is his go to sweet treat. He LOVES brownies!

This is not my recipe, I found it located on the Healthy Indulgences blog.  The first time I made them I used the butter only method, but next time I am going to try the sour cream version so that we can compare what works best for our palates.

I am in agreement with the author that Kerrygold butter is the ONLY way to go, I usually always have at least two boxes of it in my fridge at all times. I buy mine at Costco, thank you so much Costco and the wonderful Kerrygold butter Gods… You created amazing butter!  This is the type of butter your grandparents were talking about.  When I go out now and there is butter, I am completely ruined… RUINED I tell you. These brownies are dense so a small square does it for me.  I am a Texas girl so I am all about the Pecans, the more the merrier.

Something to note when cooking with coconut flour, you will want to buy the good stuff, which as far as I am concerned is Bob’s Red Mill.  I also prefer Bob’s of Almond flour, but I tend to cook more often with coconut flour.

If you have never shopped for Stevia extract, erythritol, or xylitol let me point you in the right direction so that you don’t do what I did and meander all over the store highly confused as to why I couldn’t find them, and the store associates were looking at me like I only had one eye.  Go directly to the vitamin section, Do Not Pass Go or Collect $200. You’re welcome.

I am a big baker, or at least I used to be prior to this stupid lifestyle… Kidding, it’s not stupid…. really it is…. no it’s not… While my brain is arguing with my belly, let me continue on.  These are a bit of a challenge to determine when they are ready to be pulled out of the oven because they are so dark and the consistency is going to be very different than if you are used to cooking with regular flour.

I apologize to my process improvement followers, I promise I will get back to it, I am just trying to help a few friends who have started this lifestyle and need a little guidance. I do have a really big recommendation for McD coming soon!  Stay tuned!
